Hosted by Kimio Yonezawa - 4th generation Toji, whisky and gin master distiller.
Join us for a perfectly paired dinner menu, complementing the evening’s four Akashi-Tai sake expressions.

Akashi-Tai is an artisan sake, handmade in small batches and is the embodiment of Akashi Sake Brewery’s spirit, and a prime example of characterful sake from Hyogo – the birthplace of sake. Pioneered by several generations, Akashi-Tai sake is a reflection of the Yonezawa family’s undying love for their profession, now guided by their Toji (Sake Master) Kimio Yonezawa.

Hyogo Prefecture ranks first in Japan for quality of brewer's rice production. Within the prefecture, the climate & weather differ, the waters take on minerals, all bestowing the sake with different qualities; dryness, sweetness, and intensity of taste varying by brewery and region.

both Sake Samurai® appointed by
The Japan Sake Brewers Association Junior Council. As samurai who love and protect sake, their tenet is to spread the word about the world-class culmination of Japanese libations, culture and traditional craft, around the world.
 
Join us for a perfectly paired dinner menu, complementing the evening’s four Tsuchida sake expressions.

Tsuchida Sake Brewery is situated in Kawaba, a small village of 3,100 people in Gunma Prefecture, a mountainous region northwest of Tokyo. Established in 1907, it has been a family operation for six generations.
 
Sake making at Tsuchida Sake Brewery takes twice as long as the modernized method, is more difficult and more labour-intensive, but produces a more natural sake with elegant and rich complexity with layers of flavours & a lingering finish.
A wish to utilize old and new wisdom, and carry on their knowledge and skills to the next generation.
